Fallow Deer originated in ancient Persia and have spread to many parts of the Mediterranean area plus the European continent.  You will see Fallow Deer in solid white and chocolate colors as well as spotted varieties of many different colors  The bucks sport palmated racks of impressive size.  Rutting occurs in the fall and Fallow Bucks are very aggressive with sparring the order of the day in October and November. Fallow venison is highly prized for its tender texture an mild flavor.
